Ideas for stewy dish I can serve quickly late at night

I'm looking for inspiration for something simple and tasty I can reheat quickly to serve maybe with bread or a grain dish. We don't have a microwave.

Goulash? Goes down well here, we’ll, it’s really just stoo with paprika & a red pepper& sour cream.

Tagine is great - tastes better when reheated and just needs couscous serving with it which is really simple to make

Potatoes and veg (carrots, mushrooms etc, whatever you like) cooked in a little stock and a can of stout. Very rich and delicious

I make a lovely veg chilli with butternut squash, sweet potato and spinach, that scoops lovely onto pitta breads or with couscous.

Veg chilli

I don't exactly follow a recipe, but this is the gist:
Onion and garlic, chopped
Squash and sweet potatoes, peeled and chunked.
Tin of chopped tomatoes.
Bag of spinach.
Chilli powder of your preferred heat
Tin of black beans (or whatever beans you prefer)
Veg stock

Fry off the onion and garlic. Add the squash and sweet potato, cook till they're nicely browned. Add the chilli powder and fry for a minute or two. Pour over the tomatoes, enough veg stock to give a bit of sauce (but not too much or you'll have soup) and the drained tin of beans. Cook until they're all soft and lovely - I'd guess 20 to 30 mins. Chop the spinach and chuck it in for the last few minutes.

I'll make a big pan of this as it freezes really nicely.

If I have mushrooms and peppers I'll chuck them in too.

For a variation, I sometimes use coconut milk instead of the tomatoes and curry paste instead of the chilli powder. Stir in a bit of peanut butter at the end with this one.....mmmmmmmm

I cooked this the other day, I normally stick to regular stew but fancied something different.
