Butternut squash soup recipe

Hi, I really fancy making some..any suggestions? Happy to add chilli/curry powder...recipes and methods please! Thanks in advance.

I put chopped butternut squash, diced onion, Thai red curry paste, coconut milk and chicken stock in the slow cooker. Leave on low for 6 hours then blend.

It's delicious! I just chuck it all in as opposed to measuring it out so I don't have a recipe as such.

If you don't have a slow cooker or want your soup more quickly Wink you can simply peel and chop your squash then roast in the oven for 40 mins ish until soft. I gently fry off a white onion, couple of cloves of garlic and a red chilli whilst my squash is cooking. Then blend the whole lot together with some sour cream, single cream or coconut milk, depending on preference.

I actually don't peel butternut squash I give a good wash and its blends beautifully.
