I make a remoulade salad - also good with celariac

Measurements are v rough!

tblsp capers, drained & chopped
tblsp chopped fresh parsley
tblsp chopped achovies
tblsp chopped gherkin
mixed with 3 tablsp olive oli
1 tablsp red wine vinegar
1 tablsp Dijon mustard
3 tablsp creme fraiche - you can use plain yoghurt too.

Mix it all together - with grated kholrabi. You can add sunflower seeds too. Goes well with smoked salmon, BBQ etc.

In Vermont we always used to joke that it made a good alternative baseball when you lost yours in the long grass.

Don't do what I did with ours yesterday, grated it raw into a salad, it made everything taste really bitter. (Or bitt -ar as we now say in this house after that blardy kate Nash song)
