I live next door to a fisherman and he will often bring round monkfish for us. I've ended up with a load in the freezer as I'm never sure what to do with it.

Done monkfish curry to death so need something new and relatively easy!

Monkfish is such a good fish because it’s so meaty! Wrap it in Parma ham, pan fry it and then in the oven, serve with mash, veg and a white wine creamy sauce.
