Dont want to go out in the rain - what would you make with following ingredients

I was going to make Bolognese sauce tonight but forgot to get mince, its pouring with rain and I don't want to go out.

Fridge is looking a bit poorly, looking for a recipe. I have:

Bottle of Rose Wine Grin

3 chicken breasts
grated parmesan
mature cheddar
200ml greek yoghurt
3 eggs

Pasta
long grain rice

Peppers
Mushrooms
Carrots
Onions (white and red)
frozen peas or green beans
Tinned chopped tomatoes

Chicken stock pots
Italian seasoning
Cajun seasoning
Cayenne pepper
paprika/black pepper etc
Lazy Garlic/Chilli/Ginger

I was thinking brown chicken and stick in oven to keep warm, chop/fry onion, garlic, mushrooms, maybe green beans. Stick in a load of rice, chicken stock, season with a load of black pepper and a touch of cayenne pepper and simmer off for 30 mins until rice cooked then stir in some parmesan (and bin the greek yoghurt?).

What would you make?

Chop chicken into small pieces and fry off along with peppers, mushrooms, onions and lazy garlic and chilli. Then add chopped toms, some Italian seasoning, black pepper and a glug of balsamic vinegar or worstershire sauce if you have it.
Add cooked pasta and combine. Pour into oven proof dish and top with breadcrumbs and cheese. (If no breadcrumbs just go with the cheese). Bake for 20 mins.

or Frittata with the eggs mushrooms pepper onion and some cheese

or pasta with tomato and cheese sauce

or chicken breasts baked with mushrooms carrots onions served with rice
or paella with chicken peas onions peppers rice

You could make this pasta recipe but with the veg you already have instead of the ones used in the recipe:
www.laurainthekitchen.com/recipes/paccheri-primavera/ (this is my favourite recipe blog all of her stuff is delicious)
and maybe make some chicken on the side?
Or you could poach, then shred the chicken and add a stock cube to the chicken poaching broth along with some chopped up veg and simmer for abouth 30-40 mins. Cook some rice in a seperate pot and serve the soup over cooked rice with the shredded chicken on top of each bowl.

I would make something based on this tonight, it doesn't need a lot of chicken (I only use two breasts for three people).

I often chop an onion (white) very finely and skip the spring onion.

How many people are you feeding? I think you're fine for tonight. I'd use onions, garlic, peppers, mushrooms, chicken and possibly chilli, like AtLeastItsMonday, but after frying them all off in a big pot, I'd add chicken stock, seasonings, peas and/or beans, rice, possibly tomatoes and cook it all together until the rice is done, chicken is done, veg is soft, most of the liquid has gone. Savoury rice. Lovely.

Don't bin the yoghourt! You might need that tomorrow. Keeps forever.

I would make a veg bolognese, make bolognese sauce and add in all the veg you have instead of using mince.

dh found some soy sauce and he made a chicken fried rice with mushrooms, peas, onions, eggs, ginger, garlic, chilli, etc.

To be honest it was pretty crap (egg fried rice was ok, but chicken was like rubber bullets) and he sliced his finger open when chopping the onion. But managed to finish most of the wine to compensate!!

Supermarket tomorrow to fill up fridge!!
