Recipe for Apple jam

I had the most amazing tasting apple jam when I visited America but haven't seen it here before. Does anyone have a recipe for this?

Any particular apple variety to use if so?

I have no idea about recipe, but my nan used to make crab apple jelly. I think crab apples are smaller and sourer than normal apples. It was delicious, but I’ve never had it since.
