Slow cooked bridket

Hi all, what are your foolproof ways of cooking brisket? My FIL’s which is lovely is completely submerged in liquid (inc beer). I’m cooking one tomorrow and want it to be perfect. Thank you!

I'd just put it in the slow cooker with nothing else.

Brisket
a couple of onions sliced
salt and pepper
glass or two of wine or sherry
in a casserole, foil cover then lid
140 for about four hours. Lower heat or add a little more liquid if necessary

The onions should dissolve almost to nothing, giving a very savoury sauce
