Has anyone ever made saag aloo with sweet potatoes?

Lots of sweet potatoes sitting in kitchen, trying to think of inspired and easy dinner ideas... what do you think folks? I could sweat them with onion and garam masala with cumin and then add veg stock and throw in spinach when they are cooked?
Serve with chapatis?

This is all because I have all of the above in the house and am too lazy to go out to the shops.

Will it work???

It could work. In fact I quite fancy it!

We too have a glut of sweet potatoes so tonight I am doing them Sri Lankan style a la Madhur Jaffrey..loads of fried onions, cinnamon sticks, fresh basil, turmeric, chillis, lime juice, steamed sweet potatoes.

Yours sounds better!
Sweet pots currently steaming and have just chucked in spinach. Should be ok to reheat later. Yet to taste it though!

I had a lovely curry at the weekend made with sweet potatoes and squash and chickpeas - a freind made it and said it was a Nigel Slater recipe.

I would add a tin of tomatoes to what you have suggested in the OP....

Sweet pots (boiled til soft)
Fry onion, add pots, tin of chick peas and tin of toms and couple of tablespoons of mild cury paste. Cook for 20 mins. Add the spinach - cook til done.
Serve with chapattis and yoghurt....

Now, hadn't thought of the chick peas, have a tin of those too... might throw them in before I heat up already cooked version. Version I've made tastes pretty good already, looking forward to dinner now!
