Rhubarb cheesecake

Today a friend mentioned rhubarb and ginger cheesecake. It sounds lovely to me so i googled some recipes. The pictures i have seen show the rhubarb sitting unattractively on top, or straight on the base. Neither appeal.

So my question, stiring rhubarb into the cream cheese top, would that work? Would it all set correctly?

I have only made a couple of cheesecakes in my life but do fancy giving this one a go!

I’ve stirred stewed rhubarb through the cheesecake mix before and it worked fine. I did remove some of the liquid, but spread that on the base before putting the mix on top so didn’t lose the flavour.

I have also made one with the rhubarb on top, but added a crumble topping on top of that. Was very yum.

Ooh I fancy the idea of rhubarb cheesecake. You could adapt the topping from this recipe and I reckon it’d be beautiful hodgepodgedays.co.uk/recipe/rhubarb-ginger-upside-down-cake/
