Can you make anything with lettuce apart from salad?

I've grown far too many lettuces, didn't plan properly and now they're all ready at the same time! Have a fridgeful of lettuce - can anyone think of anything I can do with it - can lettuce be cooked? Or does it just disintegrate?

There is a nigella recipe for lettuce and pea soup, can't remember what book it's in. Will go and look it up.

Hugh Fearnley Whittingstall has a really good recipe for lettuce, pea and lovage soup if you can get some lovage......can't link the recipe though, but it's in his River Cottage Cookbook!

Thhey won't freeze, will just turn to green slime when you defrost them!

Ooh thank you - I never knew you could cook lettuce! HumphreyCushion, that soup looks really easy - might try that this evening but will substitute chicken stock as I'm veggie.

Soup sounds like a good idea as I can imagine you would be able to freeze it more successfully than raw lettuce. Hoxton chick, that sounds yum!!

MIL made lettuce soup once - it is not one of my pleasantest memories.
She obviously didn't have Humphrey's recipe - as far as I could tell, she just boiled it to death & thickened the result with cornflour.
Unfortunately both DCs showed their revulsion, to which she responded with the classic line:
"They can't possibly dislike it - it doesn't taste of anything...."

I have successfully frozen lettuce soup. Also, if you have new peas and carrots, cook them slowly with a little butter and lettuce. The lettuce wilts and add delicious flavour.

You can braise it in the oven but I cannot remember whose recipe this is, perhaps Nigella???

My mum used to make a lettuce & mint sauce - finely shredded lettuce, chopped mint, sliced spring onions and vinegar. Used to have it with roast lamb.

I know some people on tv use crisp lettuce hearts to serve things on, I think as a carb replacement at parties etc

Seafood cocktail Lettuce cups

Salad Nicoise lettuce Cups

Thai lettuce rolls

Grilled Lettuce with goats cheese

Grilled cod with lettuce hearts and a rich chicken and tarragon dressing

Or if you're bored with lettuce, why not give a few out to family or neighbours? Our neighbours used to give my parents spare fruit and veg all the time, in return for minding the dog etc.
