I've been given a load of fresh beetroot what shall I do with it?

Neighbour has an allotment and grows industrial quantities of veg. He's just given me a huge bag of beetroot. I've never really eaten it and certainly never cooked it.
I was put off it for life by a colleague who ate it at her desk every day and all I could smell was beetroot.
DH likes it though.
I won't be making a cake btw.

Grate with some some carrot, green apple, dress with some vinaigrette and add some roasted pumpkin seeds for crunch.

Keeps for a few days in the fridge.

I've enjoyed the Polish beetroot soup called Barszcz, not sure what the Russian beetroot soup Borsh is like, maybe quite thick looking at pictures.
