I've been given a load of fresh beetroot what shall I do with it?

Neighbour has an allotment and grows industrial quantities of veg. He's just given me a huge bag of beetroot. I've never really eaten it and certainly never cooked it.
I was put off it for life by a colleague who ate it at her desk every day and all I could smell was beetroot.
DH likes it though.
I won't be making a cake btw.

Grate with some some carrot, green apple, dress with some vinaigrette and add some roasted pumpkin seeds for crunch.

Keeps for a few days in the fridge.

I'd put it in the bin

Beetroot, caper and dill salad .A quick and easy salad that takes minutes to prepare. Leave the flavors to mingle then serve with hard-boiled eggs and fresh dill.

I've enjoyed the Polish beetroot soup called Barszcz, not sure what the Russian beetroot soup Borsh is like, maybe quite thick looking at pictures.
