Easy recipes for Summer gatherings

Hi all. Heading away self catering with large family group next week. We eat in a lot but dread the BBQ as I end up doing so much work and the lads just throw on a steak and their job’s done!!
Any good Summer dishes? I’ve heard Delia’s chicken basque good though I haven’t tried.
