What's everyone eating in this hot hot weather?

So I don't know what I want to eat in this hot weather any ideas for yummy but light kinds of meals?

I don't eat fish or chicken and I do eat salad but as a side dish and not just a salad for dinner.

Any ideas Smile

A lot of things with salad, stir fry noodles.

I was talking to my sister and we were both saying we can't wait until that November day were the rain coming down sideways and we've got a nice stew in the slow cooker for dinner.

I mostly eat chicken, fish and salads so that counts a lot of mine out but,
Butternut squash falafel in pitas with salad
Brie, fig and pancetta flat breads
Fritata
Linguine with cherry tomatoes, chilli and bacon
Spicy bean burgers

Some recent meals have been Tofu stir fry, salad with avocado and quinoa, veggie hot dogs , macaroni cheese, feta , courgette and olive salad

Unfortunately lots of ice cream all washed down with lots of beer. It's really starting to show!
I was gutted today as I defrosted some tuna steaks in marinade but left them out too long and they went slightly green. Was looking forward to a delicious salad nicoise but instead are waffles. Grin

Ive been eating salads for lunch.

Dinner has been lots of Thai or Vietnamese food which is fresh and tasty in the heat I think.
