Toad in the hole

Everytime I try to make a toad in the hole, it always burns and doesn't cook in the middle. It's really frustrating.

I've read to make the oil VERY hot. I've left this in the oven for 20 minutes before I put the batter in. Sizzles and smokes but still doesn't cook in the middle.

I've tried having it on 220c and lowering to 200c but this doesn't work. I've tried a higher temp and the middle just doesn't want to cook. I've given up trying to for the past year now.

Any ideas please? I've tried different batter recipes.

Funny thing is, I can make Yorkshire puddings. Strange I think.

Too much batter? It should come up to half the sausages when you pour it in. Turn the temp down to 180 after you’ve put the batter in and cook for 45 mins.

Also change your batter recipe? Best one EVER is equal quantities of flour, eggs and milk. So weigh them all out and mix, it has never failed me yet!

Equal quantities is the one I normally try. And yes, it only goes about half way up the sausages.

Nigella’s recipe from Kitchen is the BEST toad in the hole recipe ever - you squeeze the sausages out of their skins and fry them for a minute first. I actually bought some frog shaped moulds and squash the sausage meat in them, so they look like little toads. Obviously that might be a bit too much hassle (I do have a full time job, honestly, just a very fussy DD!)

IMHO, it also helps to make the batter in advance and let it rest for at least 30 minutes. Whack it in at 220C for about 35 mins.

And serve with onion gravy with a splash of Marsala in.

Do you put the sausages in with the oil when it heats? That's what I do and it comes out fine every time.

What kind of dish do you cook it in? I find a metal time works best. Glass and ceramic don't conduct the heat to the middle.
