I'm trying to eat low carb at night (not obsessive, but no rice, pasta, potatoes or bread). it's going well, but I find that I'm eating meat almost every night because a piece of grilled meat/chicken/fish with vegetables works well. Most vegetarian meals I usually make include carbs - eg things like risottos and pasta dishes.
I've got a few we do and like such as roasted vegetables served with feta or goats cheese or aubergine "stew" made with butterbean mash. I will occasionally roast or bake a butternut and stuff that but it feels a little too carby.
It's not that we don't eat enough vegetables - we eat plenty - it's just that I'd like more meals where the veggies are the star rather than the supporting act.
