I have recently bought a Neff slide and hide variable steam oven. It is fantastic. The only problem I am having is the bread proofing. On the second proof although I am only using setting 1 the dough gets really wet and collapses. Because the oven is so good I cant help but think I am doing something wrong. Can anybody help
