Peeling potatoes the night before

Hi,

Silly question but can I peel potatoes the night before, cover in water and leave on the side?

I have no room in my fridge and want to get ahead for tomorrow

I do then just change the water before I boil them.

Yes i often do. I put them in a saucepan on the cooker top and leave the lid on overnight, but always change the water before boiling the next day. I get really itchy hands from potato starch and think soaking them overnight helps get the starch out even more.

I do it all the time. I don’t even always change the water if I happen to forget. Think we are all still alive!!

Yes you can. I do this all the time and change the water before cooking as it'll be very starchy.
