What can I do with sweet potato?

I've got two massive sweet potatoes. I've never cooked them before - any tips?

I've got loads of herbs and spices, but no idea where to start!

Chop into 2cm cubes. Season & mix with paprika and a bit of cayenne and olive oil (not too much). Roast on baking tray at 180 for 40? mins, checking every 15 or so. If they burn they taste delicious anyway.

I have one in the fridge that's heading for a vegetable curry along with onions, mushrooms, spinach, tomatoes, lentils, coconut milk and spices.

They make nice wedgies though.

Peel and chop sweet pots (thick slice) and in chicken thighs - quarter a red onion or too -put a bowl and toss with oilive oil - put on a baking tray - season with salt and pepper - add some fresh unpeeled garlic - place in hot oven for about 30 mins (depending on size of thighs).
It is lovely.

Sweet potato wedges are nice. Slice them longways into wedges, toss in oil and whatever spices you fancy. Spread out on a large baking tray and roast until they are squishy!

Base for a Spanish tortilla
Sweet potato fries (soak in water for 2 hrs)
Cubed and roasted with feta, baby spinach, tomatoes and pepper salad
Sliced and fried with a Parmesan crust

What can't you do with Sweet Potato!?

You can do anything with them.

Firstly - anything that you do with ordinary potato - chips, mash, roast, wedges, jackets etc., plus Shepherd's Pie toppings, fish pie toppings .. just substitute spuds for sweet potatoes or do half and half.

Then soups, stews, curries, .. the list is endless. You can even use them in baking ... pancakes, pies etc.

Loads and loads of recipes online. Google is your friend!!

We did sweet potatoes on the bbq last night. I cubed them, sprayed with avocado oil, dusted with cinnamon, salt and pepper then wrapped in foil and threw them on the coals. It works lovely in the oven too without the foil.

Captain I just chop up and sauté whatever veg in a bit of oil, making sure the onions get at least 10 minutes. Add quite a bit of garlic and ginger and about 3 tablespoons of curry powder. Cook for a couple more minutes then add the tomatoes and coconut milk and a big mug full of lentils. Chuck some frozen spinach in, give it half an hour or so, adding a bit of water if it needs it. I put some salt in at the end.

Great suggestions. I ended up cutting them in to little cubes, drizzle of olive oil and coated them in Cajun spices, paprika, oregano and chives (basically what I had in the cupboard) and oven baked. Was delicious!

I'm attempting a sweet potato and chorizo canneloni this week which I'll make up as I go along.
My favourite with them is baked with smoked mackerel pate.
