Quick healthy meals for 2yo & 1yo?

I have 2 dc, 2 and 1. They are so picky and apart from bananas and grapes I find it quite hard to get them to eat healthy things. Veg just gets flung on the floor! Could anyone recommend any quick & easy meals I could make that are filing & healthy that they'd actually eat?

DIY Summer rolls, or even simpler, salad wraps... Could add some peanut sauce or strips of turkey if you want to add protein. I find that assembling their own food make my DC more adventurous

When my children were that age I would roast a chicken or some chicken thighs / drumsticks and serve it with rice and some veg (cucumber/ tomatoes / carrot) or peas / sweetcorn and some hummus

The next day use the rest of the chicken and stir in to some pasta with some vege and either pesto or just cheese.

Also do the same with potatoes.

I would precook the chicken so it never too stressful
