Anyone got a nice veggie recipe?

Got some guests coming over at the weekend who we don't see very often. They're both vegetarians (not vegan though), and I'd like to do a nice main course followed by a dessert for them, anyone got any recipe ideas? Don't want it to be too faffy though, I've got a toddler to look after too!

Have you asked what their favourite meals are? Why not go for a typical meat meal and then make it vegetarian like vegetarian lasagne

Mezze or curries or Mexican?
Everything (almost) can be made in advance and just reheated on the day. Easy to prep and you can make some elements toddle friendly too.

These all sound like great ideas, I know they like spicy food (did veggie chilli for them last time), so Mexican might work. Yes pretty informal, but I love cooking so part of the pleasure for me is making it Smile

It’s a spinach and feta pie with filo pastry. It’s really really easy to make

Asparagus or avocado vinaigrette to start.
Pasta Primavera for main.
Raspberries with a lemon sorbet and almond biscuits for pudding.

This fancy mushroom lasagne is nice

even dh a confirmed carnivore said it would be nice to have it again! I make him eat veggie food every so often!
