Low carb solutions please!

Friends over for bbq on Fri - usually big foodies, like us, but have texted to say they are low carbing Hmm

I am planning to do a ricotta and griddled courgette salad to start and then butterflied leg of lamb with mint, lime and tamarind sauce... But with what? Normally I would do something like garlicky cubed roast potatoes.. Any suggestions gratefully received! (Don't break my heart by telling me tamarind isn't low carb... I haven't googled it) Grin

Look in the lowcarbing bootcamp section - there is a vast collection of lowcarbing recipes stickied at the top.

Generally, I’d say a variety of meats/cheeses/proteins is good. Some salads, some veg dishes like fried or grilled aubergine, some veg skewers (peppers, mushrooms, courgette, cherry tomato, maybe cubed halloumi. You can probably go ahead and make your own more carby accompaniments, I don’t suppose they’ll mind.

Cauliflower rice with a good, strong sauce with a bit of a kick, or loads of fresh herbs, olive oil and lemon.

Courgette strips (use a peeler to perk it lengthways) sautéed very briefly (like a minute) in olive oil, garlic and chilli. Or raw, with olive oil, garlic and chilli.

Some great suggestions thanks. Not keen on doing more cheese or courgette after the starter, and will be doing a cheeseboard instead of pudding. I think maybe just salad...

Garlic roast cauliflower.

Garlic olive oil, salt, cauliflower, oven for 30 mins. Totally delicious.

I can’t believe I forgot about celeriac, it’s my absolute favourite thing! So delicious. I knew there was a third thing I wanted to recommend and that was it.
