Blackcurrant cheesecake
It's beautiful sweet and creamy cheesecake with a swirl of fruity and sharp black currants
Make a biscuit crumb base with 2/3 pack of crushed digestives and about 100 g melted butter - press down into a 8" loose bottomed sandwich tin , lined with paper .
Make cheese cake with ( all amounts approx - I just taste and adjust )
400 ml double cream whipped , added to 300 ml cream cheese , 100g caster sugar , 4 leaves of gelatine ( soaked in cold water 10 mins followed by dissolving in a little boiling water )
Grated zest of 3 lemons
- mix all these together and put on biscuit base , leave to partially set in a fridge
Heat in a saucepan about 2 mug fulls of blackcurrants with 1 mug of sugar and about a tablespoon of water, heat until sugar devolved and blackcurrants are cooked ( I don't Top and tail , I just wash them as they are going to be sieved ) sieve so you only have liquid , taste and adjust with more sugar if needed , add 4 leaves of gelatine ( soaked in cold water 10 mins then wrung out and dissolved into the hot blackcurrants liquid stirring well so they dissolve completely - leave to cool down
Once blackcurrants are cooler swirl through the cheese cake mixture then return to fridge to allow to set completely
We made one last week and it was yummy , going to make another for next week !
Another idea is to make home made blackcurrant cordial that's amazing too
