Homemade coleslaw

Would this benefit from being made today for tomorrow or better off fresh in the morning?? Never done it before!

definitely tomorrow. The dressing separates a bit if left overnight and it looks all a bit uncrunchy.

Isn't it weird? I always prefer homemade coleslaw better the next day- it seems to have more flavour, I don't get the separation thingy like above though although I do give it a good mix before using.

I learnt a trick for coleslaw - if you chop all the veg the day before and add some salt, cover it and leave it in the fridge over night, then the moisture from the veg will seperate and you can drain this off. Then add the wet ingredients and it will last longer without it going watery.

OP, if you have a veg peeler use it to shred the cabbage. Much better than chopping with a knife
