Because i find it so quick and easy, kids and adults both enjoy and can be adapted to be made from all frozen/cupboard ingredients so is an easy one to always have in the house for an emergency meal..
Lamb biryani !
500g lamb mince (frozen optional)
Green beans (fresh or frozen)
Chicken stock
Tomato purée
Rice
Curry powder
Onions/garlic (optional, also fresh/frozen)
Olive oil
Fry off onions garlic in olive oil, add lamb mince and brown
Add 2 table spoons of tomato paste
Curry powder to taste (1 table spoon for young ones generally)
Throw in green beans (much or as little as you like, I put it loads to children get some greens in them!
Add basmati rice maybe 200-250g? (again, can add more to bulk out or less if desired)
Cover with chicken stock- 2 stock cubes or equivalent. (enough liquid to cover)
Simmer with lid on until rice is cooked and liquid absorbed
