Quick cook meals for hot days

I thought I'd seen a thread in this but can't find it- please link it you know where it is!
Looking for some quick cook evening meals which feel like 'meals' rather than a substantial salad. Don't mind salad as a side dish but have salad most days for lunch. Don't mind a bit of cooking but not hours of prep. So far this week we've had chicken roasted with potatoes and lemon; home made burgers; tandoori chicken. Will stir fry one day and maybe wraps another. Any other ideas please? Thinking these ideas would be good for self catering holidays too.

Rotiserrie chicken with baguette, potato salad, corn on the cob and coleslaw
Frittata
Gammon Steak with pineapple and potato wedges or rosti
Steak and chips with salad
Grilled or baked fish with new potatoes and veg

Cheats quiche? Sheet of ready made pastry, either puff or shortcrust, open it out flat onto a baking tray. Score a margin (I don't think I mean "margin" but my mind has gone blank) and prick the base with a fork. Mix together 2 eggs, grated cheese, and either milk/creme fraiche and pour over. Top with whatever:
Ham, caramelised onion, cherry toms, parmesan /
Salmon, leeks(soften in pan first), lemon zest /
Feta, sun dried or cherry tomatoes, olives etc.
Takes about 25-30 mins in oven. Serve warm or cold.

I had a salad yesterday with salmon.

Piece of salmon in foil with salt and pepper - 20 mins in the oven. Instead of salad you could do new potatoes and 'summer' veg such as mangetout and baby corn.

A snacky/supper dish I do is smoked fish and rice cooked in a 50/50 mix of orange juice and water, you could add a salad as a side to balance it a bit more.

Another snack on

pita bread with lettuce, bacon and creme fresh.

Stick a joint of lamb or beef in a slow cooker, serve with pitta or crusty bread with veg or salad for people to make their own sandwiches.

A vegi bake (with sausages or chicken if you want meat) would work well.

Chopp up onions, peppers, potatoes, courgette - basically anything in the fridge.

Season, drizzle with oil and stick in the oven.

kebab skewers pita bread hummus & salad.

chopped chicken breast (buy ready cooked) toss into cold pasta and pesto add mozzarella and bung in some cherry toms.

boiled eggs and cold meat platter with some crusty rolls and decent butter.

steak and new potatoes w green beans, baby carrots.

posh beans on toast (fried onions mushrooms and generous amount of cheese)

creamy mushroom bruscetta made with a cheeky sachet of peppercorn sauce and some sauteed garlic, sprig of thyme and cracked black pepper.

omelette or frittata

stir fry
I'll stop now, I'm starting to get hungry Grin

A curry (make a lot at the weekend and just cook rice fresh) is meant to be great for cooking you down.

Chicken skewers

Salmon fillets with new potatoes

Fresh pasta and cherry tomatoes etc

tray bakes of any variety so just lay oil then potatos sweet or normal.few garlic bulbs.onions.then your meat.be it pork or chicken thighs or even fish.you can add spice or flavoured oil.
then servie with salad.veg.rice etc.a great on is mustard slathere pork on a beg of potato wedges. or new potatos,chorizo and then chicken thighs.

pasta one pots.
spring casserole.chicken thighs,stock,onions,potatos and peas in a big pot let it simmer.serve with crusty bread or baguette.
roasted tomato and pepper couscous
chicken stuff with cheese rapped in bacon
poached chicken for 10. make coronation dressing by frying onions,mango chutney tomato past and yoghurt or crème fraiche.mix with the chicken.serve with jackets.

This week we have had

Tagliata - beef cooked rare and sliced served with Parmesan shavings and leaves, drizzled with olive oil

Fajitas - with hm guacamole etc

Salmon, bacon, new potato bake with spring onion mint and peas

Next few days we will have

Courgette bacon linguine
BBQ with whole sea bream, sausages, chicken skewers, salads, new potatoes
Pulled pork baps with nice salads
Pork souvlaki w flatbreads and tzatziki

Salads include broad bean tomato & ricotta w salsa verde, feta red onion mint and watermelon, Greek with feta

I agree @AndhowcouldIeverrefuse , am very grateful for the suggestions. Last night I made salmon with an avocado sauce - made simply by whizzing avocado, Creme fraiche and garlic. It was lovely and no stirring over a hot stove required!!
