What to do with mascarpone?

I need inspiration to use up a 500ml tub of mascarpone.

Something savoury, for preference. Meat-free, but fish is ok.

If it was soured cream, I'd stew mushrooms in it.

(We're all cheesecaked out, so not cheesecake.)

Any ideas?

I put salmon fillets in a dish with a lid, mixed some mascarpone with minced garlic, tarragon and black pepper, spread it on the salmon, topped it with sliced baby leeks, put the lid on and baked it. Lush.

I tried the idea of adding nutritional yeast for a mushroom stroganoff, but prefer to make that with soured cream.

I had it with strawberries when the others had ice-cream with theirs.

Marmite is one of the few things I miss when I go low carb. I streaked some through the mascarpone and savoured it verrrry slowly Smile

Got good mileage out of that pot. Thanks for the ideas.
