Cucumber recipies

It's that time of year where my cucumbers are growing so fast I've run out of things to do with them (no smutty comments please!)
I've made some sweet/chilli pickle, but that's about it, any ideas?

Pickled cucumber salad is one of my favourite things.

We had a cheese cake book and there was a recipe for cucumber cheesecake

I've just had this at a local cafe for lunch with courgette ribbons but would prob work as well with cucumber. It was ribbons of cucumber with some chilli flakes, fresh mint and warmed through with some goats cheese on toast. It was delicious! Maybe you could heat the goats cheese with the chilli and then stir the cucmber ribbons and chopped fresh mint through it so its not heated up.

I've just made cucumber and celery soup. Goodness knows why when it's going to be hot all week, but it tastes quite nice.

In g&t instead of the usual lemon is nice, or in Pimms

Chopped cucumber
Chopped baby tomatoes
Chopped red onion
Lime juice

I was about to google 'alternative uses for cucumbers', then thought better of it

Do you have a food bank or similar local to you? They can't store fresh fruit/veg normally but they can often put a box of stuff like that out in front for people to help themselves to.

In México we eat them with salt and lime as a salad.

Shred duck, carrot and cucumber in a bowl. Shake over some soy sauce and honey. Shake some sesame seeds on top.

And then send me a bowl.

“Smashed” cucumber salad. Cut cucumber lengthways, scrape out the seeds with a spoon. Roughly chop into pieces and bash with blunt side of th knife. Mix together in a bowl equal parts of sugar, rice wine vinegar, light soy sauce and toasted sesame oil (one tablespoon each is usually enough), pour over cucumber and leave to marinate for a bit before serving. Sprinkle with a few sesame seeds. Warning this is actually quite addictive!

Peel and de seed a cucumber, then coarse lay grate. Mix with fibnely grated carrots. Quartered cherry tomatoes and rocket. Dressing with olive oil and orange juice.

Or make low-carb cucumber baguettes. Slice lengthways, scoop out seeds and fill with chicken, ham etc. (Can also be peeled if you prefer).

Cucumber and mango salsa, with some Chili and lime juice.

Nice in a tuna taco.

And sliced in water with mint
