I eat at work so soup and a salad is my usual (no bread roll or croutons). If I'm at home I eat leftovers (sliced roast meat, roast veg, cubes of tofu) on top of a salad. If no leftovers then a soft boiled egg. Dressing just lemon, oil, salt as commercial salad dressings can have a surprising amount of sugar!

For breakfast I usually have eggs in some form or other, lunch is difficult, but I made a crustless quiche the other day which was quite nice (making one for lunch today too), dinner is whatever meat everyone else is having but with salad instead of potatoes/pasta etc. I make my own yoghurt with full fat milk and then strain it so it's extra thick, it makes a satisfying dessert with some frozen berries added.

Depends how low carb you are going I suppose, but if you are allowing some carbs eg veg etc....

I don’t often eat breakfast but when I do it’s usually a shake so I do almond milk, full fat live yoghurt or kefir, blueberries/raspberries, avocado or peanut butter in my bullet blender.

I do a big tray of roasted Mediterranean veg, olive oil, peppers, Anchovies, mushrooms, sundried toms etc on a Sunday night- slow cook it and then put a scoop on a salad, with some feta cheese. That will do me for a few lunches

Really nice salads with lettuce, tom, cucumber, edamame peas, peppers, and some protein in the form of eggs, ham, cheese etc and some fat (olive oil, avocado)

I made a delicious frittata this weekend with smoked haddock, eggs, asparagus and cream; it sliced really well once cooled and would have been great to have as lunches but I ate it all!!

For evening meals, the internet is literally awash with recipes. Look up Keto, paleo, high fat/low carb etc on Pinterest and there’s so many to choose from. Tonight I’m doing frozen fish fillets with red pesto, and puréed peas.

I know you said lunch is the problem but I LOVE eggs mushrooms tomatoes and spinach for breakfast. If I'm really hungry I have 3 eggs. For lunches I do mixed "salads". I have a mix of things like tomatoes olives raw broccoli raw cauliflower cottage cheese cord fish or chicken pickled beets avocado hummus etc etc. It's v filling and fresh.

I like eggs with stir fried veg for breakfast (or any time really) but I just keep meals basic and I am carb mindful not low carb. So meat and fish with lots of veg is a good go to option and easy.
