Using up basil and coriander

Are there any decent recipes anyone can recommend for using up leftover coriander and basil?

I’d make shed loads of tomato and basil sauce and freeze it.

Can’t help you on coriander, I think it’s the devil’s work weed WinkGrin

Freeze the lot of it and it'll make a quick supper when you're in a rush.

Chopped coriander freezes well (basil notsomuch).
Or chop both into the egg mix to make a herb frittata - can also put frozen peas in it and dot with feta cheese or goats cheese. Lovely summer dinner.

I freeze coriander. Or I wrap it in kitchen roll and pop in a plastic bag and it's ok for a few days in the fridge.

Ps I love corriander and would eat it daily. Basil stinks to high heaven and makes me heave Grin

Coriander chutney: blend coriander, lime juice, salt, fresh chilli,sugar, toasted cumin seeds. Sorry can’t give quantities as you just make it to your taste but start with lots of coriander and add a bit of all the others until you are happy with the taste - you will also need to add enough water to get it all to blend. Freeze in ice cube trays and use in sandwiches, salad dressings as well as a condiment to accompany Indian food.

Chop and freeze in ice cube trays with water. Easy to then add to a dish and the water doesn’t affect the flavour.
