Can I have people for supper without going to the shops?

Just remembered having people over tonight and don't really have time to go to the shops. Possibly could ask them to grab something on the way if a garnish or last minute handful of spinach is needed.

So what can I make that is lovely and interesting and delicious from my store cupboards? Parameters no cheese or creamy sauces, something interesting also preferred so not risotto, pasta etc.

I've got all standard storecupboard stuff and dried goods, tinned things, pulses, spices, potatoes, carrots, freezer bits (e.g. Frozen leeks, peas, corn etc)

Yeah veg curry is probably the best you can manage but only if you have decent fresh spices and can make a proper paste. Have you got any fresh coriander and yoghurt? Otherwise can you order a takeaway?

the best way to make it interesting is to have choices, so do a variety of different veggie indian dishes; dahl, veg bhuna; onion bahji; pakora; aloo gobi or Bombay potato; Do you have yogurt? If so you can make the Jamie oliver flatbreads (amazing), as well as raita. Leeks and carrots can be nice in a Korma. Pilau rice.

Chopped fresh tomatoes and coriander leaves mixed together makes a lovely accompanying salad and doesn't need a dressing.

Couple of good options would be one of these chicken dishes (can also make with cauliflower) or this risotto (I know you said no risotto, but it is delicious!).
