I needed a third ripe banana to go with the two I intend to bake with in my fruit bowl, but according to the receipt I accidentally bought a plantain. Can I use it interchangeably with banana? Guessing not but I've never plantained before and don't know the drill!

No, but you can fry it and have with curry, delicious.

I let them get very ripe, grate them and add to pancake batter.

Slice and Deep fry until golden. You will not get the right flavour if you use them for banana bread.
