Salad idea request - what’s your favourite?

Hi all
I’m cooking for 8 this week and making slow roasted shoulder of lamb with mango chutney and flatbreads. It’s my go - to easy dinner for large groups. I need a new salad to serve alongside.
The lamb is sweet and sticky and served in a ‘pulled lamb’ style so not a roast at all. So I need something fresh to lift it a bit. Normally I do tabbouleh with pomegranate but would like something different this time - anyone got any great summer salad ideas which might work alongside this?

Madhur Jaffrey's Gujurati carrot salad is a favourite in our house. You could substitute the black mustard seeds with cumin seeds or roughly crushed coriander seeds.

www.deliaonline.com/recipes/collections/delias-summer-collection/mexican-tomato-salsa this is lovely, it's our 'go to' BBQ salad as it's really fresh and light, works well if you've got heavier meats and carby stuff (not that the lamb sounds heavy - sounds delicious)

A Greek salad? it's one of out BBQ favourites and can be made day before:
Cucumber, Tomato (use cocktail ones), red and green Pepper in pretty much equal parts.
Add feta cheese and black olives.

Dressing is simple: olive oil, lemon juice (use real ones!) Oregano- dry or fresh, salt and pepper.

This is super quick. you have a Sainsbury’s handy, grab two pots of their tabbouleh and a large pack of parsley. Chop the parsley and mix with the ready made tabbouleh. Easy, great on flatbreads too.

That main sounds absolutely gorgeous, and rich. To keep it simple, I'd do a spinach based salad with sliced sugar snap peas, finely sliced orange pepper and nice chunks or slices of mango, which would work with the main. I usually make my own dressings - I'd use a fruit vinegar, a teeny bit of olive oil (that's a personal choice as I don't like oily dressings) and be generous with the seasonings. Maybe some chopped coriander leaf in the salad, if you use that in the main?

Shredded lettuce with a bit of mint sauce mixed in. Or a bit of mint yogurt on the side.

Blanched green beans with cherry tomatoes and pine nuts.....looks spectacular if beans are refreshed under freezing water.

I quite like a finely chopped homemade coleslaw with added extras - different vegis, seeds, fruit, herbs cheese, chopped egg etc.

Chickpea salad. Can't recall all the ingredients but lemon juice, finely chopped red onion, parsley maybe? Have a google.

Goodness I just want plates of salad now!!
Love the look of the ottolenghi pomegranate and tomato salad and some of the carrot ones.
Might try a variety!
