Pre baby batch cooking

Have a c section booked for 4 weeks time so I want to use the 2 days a week DS is at nursery for some serious batch cooking. My chest freezer comes Thursday Grin

I’m good at the standard chilli/lasagne/curry etc but as it’s going to be mid summer I was hoping for some lighter suggestions?

So far I’ve got aubergine parmigiana on the list, a fish tagine type recipe would be good?

Not at all fussy but would rather avoid too much spice!
