What are your favourite recipes which include a lot of chickpeas?

At the end of this recipe Jack suggests replacing the chicken with chickpeas. I've made it lots of times, it's delicious.

I've just made dinner for tomorrow-it's a Greek dish, simple but really nice.

I used two tins of chickpeas-you'll need to soak and cook yours first.
Fry an onion until golden in some olive oil
Add a bag of spinach and wilt with the onions and oil.
Add salt, pepper, and 1/4 tsp of ground cinnamon.
Add about two tbsp of tomato purée.
Add enough water to cover the chickpeas and spinach, and simmer gently for approx 20 mins, or until the liquid has reduced a little.
Check seasoning, serve with a wedge of lemon squeezed over and crusty bread.

We eat a lot of chickpeas here and in addition to the ones above i also love koshari which is an Egyptian dish of rice, macaroni, chickpeas, lentils, spicy tomato sauce and fried onions (so so so good)

I also take cooked chickpeas and cook them in milk before blending them for a veg soup base

We have felafel wraps for picnics

There is also hummus with whole chickpeas which is delicious and nice for breakfast.

You can make a version od baked beans with them too.

Apparently you can also make cookie dough with them which i keep meaning to try.

Chickpea, spinach and sweet potato curry (cooked with spices in coconut milk)

Chicken, butternut squash and chickpea stew cooked in tinned tomatoes with harissa paste stirred in

smoked haddock and chorizo stewy/soupy thing with chickpeas and red kidney beans in a tomato and worcestershire sauce sauce (sounds absolutely sacrilegious but tastes yummy; been a favourite in our house for years)

I also love chickpea curry and chickpeas in a tajine with couscous. Also hummus!

Chaat - a salad type dish with cubed boiled potatoes, chickpeas, cucumber, onion and spices garnished with yogurt and tarmarind sauce and fresh chillis and coriander.

Or season with chilli and lime and bake in oven for a healthy snack alternative to nuts (you would have to boil them first if they dried though)

Chickpeas can go in just about everything! Daals, curries, stews, soups, chilli, with pasta hot or cold - in salads, roasted, whizzed into hummus. You can even make a healthier "cookie dough" using chickpeas as the base; kind of a thick, sweet hummus really. They're so versatile.

My favourite dinner at the moment includes a cous cous with chickpeas.

Rough recipe
2 red pepper
1 courgette
1 aubergine
1 large onion
2 large mushrooms or a handful small

All diced. Fry until soft with a little oil, a few shakes of cumin, paprika and cinnamon. Cook cous cous with a veg stock cube (I use a kids ikea bowl as amount)

Chop a small pack of apricots and mix in with similar amount of raisins and a tin of chickpeas. Mix it all together.

It’s lovely on its own or we have it with lamb koftas, Pitts, hummus etc and it makes a massive batch so we eat it for lunches too

I do a SW salad quite often for lunch. Roast cubes of butternut squash (or I use one of those prechopped bns and sweet potato bags) with a sprinkle of chilli flakes, bung in some red onion, add cherry toms and when it's all nearly done, chuck in some chick peas.
It can be eaten warm or cold, but I tend to cool and have with either couscous or lots of salad leaves. Lemon or balsamic work well as a dressing. Roasted bits last for a few days in the fridge.

Roast them with paprika and stick them in fajitas with a bit of sour cream, freshly pickled onions and guac (also chop up some halloumi and add that 10 mins before the end, then sprinkle with a little bit of lemon juice).

Some time ago, I was at a function with a buffet and one of the vegetarian dishes was Coronation Chickpeas. Best thing on the table and I'm not even vegetarian!
Would never have thought to make it, but they were amazing.

Pasta e Ceci turns up in our house in some form most weeks. My mom made it loads and it tastes of childhood to me!
