Cold vegetable ideas pls

With it being so hot I’m looking at doing more cold meats/quiche type evening meals but one of the DC won’t eat ‘salad’ so I’m struggling to get vegetables into him unless I do normal steamed veg with isn’t ideal with a cold meal.

He will have carrot sticks but not cold tomatoes/lettuce/sugar snap peas.

I’ve tried broccoli and bacon salad, home made coleslaw.

Sigh

Any other ideas for cold veg?

Steamed and buttered green beans? We would have those with cold quiche.

Would he eat baby spinach leaves? My fussy eaters would pick at a bowl of these (once upon a long ago) but they would also eat some salad if I made a vinaigrette with a drop or two of honey in it.

How about beetroot. Either raw and grated or cooked cold with apple and a yoghurt dressing.

Can you roast a whole load of veg at the beginning of the week and serve room temp? Tomatoes, red onion, peppers, aubergine, courgette, even broccoli and cauliflower would work well.

Also my favourite "salads" are often not lettuce based - eg. torn up buffalo mozzarella, griddled courgette, mint. Or roast red peppers, capers, anchovies. Or halved cherry tomatoes, torn basil, soya sauce (honestly it works!!). Get him to make his own guacamole and fresh salsa. Or even cold silken tofu topped with avocado dressed with a bit of soy and sesame oil, topped with some sliced spring onion.

Or how about cut up crudités with a dip to make them more interesting? Guacamole I mentioned already, also home made hummus, white bean dip, babaganoush, taramasalata, tzadziki, warm artichoke and spinach cheese dip/bagna cauda... you can also mix green peas and:or kale into guacamole.

quinoa and freekah roasted med veg salad with feta

Giant cous cous with cherry tomatoes, spinach and ham hock

Mine eats beetroot ‘carpaccio’ - slice cooked beetroot very thinly and serve sprinkled with lemon juice and salt.

I like aubergine slices fried or grilled with lots of oil and then served cold dressed with oil and vinegar, chopped mint and garlic. I’d be the first to admit I haven’t tried this with a child.

Avocado?

I echo the cold roasted veg. Both Mediterranean type veg or your carrots/sweet potato/parnsips etc type veg - either sort are nice served cold or at room temp.

You can mix into cooked cold pasta as well and basically have pasta salad.

These are such lovely ideas! And have also given me a horrible wake up call to how picky he is being.
He has no SEN and eats much more widely if other people cook so it is picky not anything else

Have realised he now turns down-
Peppers raw or cooked
Aubergine
Courgette
Tomatoes
Raisins (won’t even eat them in cake or scones).
Avocado
Sweetcorn

But I did cold dressed green beans tonight thanks for the suggestion and he did have them fine

Carrot and apple salad is a definite yes

I might play around with coleslaw ideas and the dip idea is def a good one.
