We're trying to reduce how much meat we eat a little bit (aiming for two meat-free dinners a week at the moment - that's a lot for us 😂). So far we've had vegetable lasagne, chickpea curry and bean chilli, which have all been pretty successful. I'm just after some more ideas/recipes if people have some good ones they could share? They don't have to actually be vegetarian, happy to use stock, Parmesan etc. I've tried googling veggie recipes but they're a bit hardcore for us (half a roasted aubergine etc). Thanks!

Halloumi cheese tray bake.
Chop onion, peppers, chilli, sweet potato, green beans and whatever else you fancy. Chuck in a roasting dish, drizzle with lots of olive oil and add sliced halloumi. Roast in hot oven for half an hour or so.

Homemade bean burgers (jack Monroe’s carrot, kidney bean and cumin burgers are fab)
Vegetable tagine and cous cous
All staples here, I tend not to use recipes but there are plenty online.

We started eating less meat three years ago and it's second nature now. Meat is twice a week- unless a roast is made and can stretch a few more meals- but I count that as Sundays meatBlushGrin.

We have pizza, curries, risotto- with arancini the next day, and pasta mostly. Our favourites are red lentil dhal and flatbreads, pearl barley and veg stew, roasted tomatoes with pasta and cream, potato green bean and olive salad, asparagus and pea risotto, retried bean and cheese quesadilla, bean burgers, pumpkin laksa and veg ramen.

The meal plan threads on here are usually started by lastqueenofscotland who I think is vegetarian as her meal plans seem to be- I often read her posts for veggie inspiration Blushand there are always a few vegetarian meal plans there as well as hers .

Tinned tomatoes is a good blog. Also go onto veg.soc.org - loads of recipes from the vegetarian society.

veggie stir fry.saute some pepper tomatos,garlic and onions.let soften together.add jar of dolmio.meanwhile be cooking pasta.then mix together with some mozerella and roasted pine nuts.(add touch of red pesto if you want to nosh it up a bit.sprinkle with cheese.lovely tray bake.

chick pea tagine.
sweet potato or squash curry.
pepper fajitas.
rice stuffed peppers.
lentil shephards pie
carrot rosti
frittata
quesadillas
