I'm not really a salad eater and a bit rubbish at veg in general, but I'd like us to start having a salad alongside our meals more often.

Any suggestions for simple but tasty salads to start us off?

Our meals are generally pasta, fajitas or things that are served with rice (curry, chilli, etc). My only hard limit is coriander - I detest the stuff.

Greek style salad is quick and colourful and goes with almost everything.

You could make salsas to go with your Mexican meals, sweetcorn and red peppers or tomatoes and avocado for instance.

this is a Green Bean salad

i don't like coriander either, so I put flat leaf parsley in instead. It's good with a casseroley thing, but would work well with chicken or salmon.

Mango salsa to go with chilli or fajitas - mine has corinader in but you could always leave it out:
mango, red onion, red pepper, red chilli, lime juice, coriander

Guac as above - avocado, lime juice, red onion, red chilli, halved or quartered cherry toms if wished - I like it chunky, rather than mashed

With curry - diced onion, cucumber, quartered cherry toms, mint (or a bit of mint sauce)

A cucumber ratia nice nice with curry or a chilli. Add mint sauce or jelly to plain yogurt to taste. Grate or finally chop cucumber , if you grate it give a bit of a squeeze to remove excess juice, stir through the yogurt and serve.

Do you like beetroot? This one is lovely with something cheesy, such as a quiche.

Chopped beetroot, cucumber, red onion, flat leaf parsley, lemon juice

Another idea for beetroot, (use the plain cooked vacuum packed ones not the vinegar ones) to chop/small cube one and put in a bowl, spoon over some plain greek yoghurt and scatter with chopped chives.

Looks good in a white dish.

Ive just had a Greek salad with feta and black olives. My OH is Turkish. It's not really salad but we regularly have watermelon, feta and Pide Turkish bread. That's a staple snack for when it's warm Smile

I love smashed cucumbers, also pickled salad is quite nice with grilled meats and you can make it in advance. Similar to this recipe here but we add red onion and peppers too.
