MrsWeasley · 20/05/2007 14:45

I've not even planned what we are having today

I must say it would be so much easier to do a plan but would it work as my kids dont all eat the same stuff. How do "planners" cope with fussy kids ? All tips welcome please I am seriously thinking of going down the if you dont eat it you get nothing route but how long before I give in??

NomDePlume · 20/05/2007 14:50

Only thing planned, other than a huge Sunday lunch today, is a pancetta & chorizo tomato (homemade sauce) pasta (DeCecco Penne)

NomDePlume · 20/05/2007 14:50

WelshMum, thankfully my 3 aren't fussy !

jellyjelly · 20/05/2007 17:59

Tonight - roast potatoes and vege. Beanburger for fussy dd. Cornish pasties from the Farmers' Market for the carnivores. Nutroast for me.

Monday - vege curry and rice

Tuesday - dp at work so he'll sort himself out. For the other 3 of us it will be omelettes and salad, probably followed by cinammon toast when we get sugar-munchies.

Weds - sausages (veggie or Porkinsons), mash, vege, gravy

Thursday - dp cooks, so don't know what yet.

Friday - eat out.

Lemon Chicken

Ingredients:

onion
pepper
mushrooms
chicken (cut into bitesize pieces)
1 lemon ( the juice and zest)
garlic
cream or cream fraiche
basil and organo
parmesan (or chedder optional)

saute the onion and pepper in a little olive oil (i sometimes add a pinch of sugar to carmelize the onion a bit more for dh)add the chicken
and mushrooms when the chicken is cooked add the lemon juice and zest and then the cream or cream fraiche and any herbs you wish. when the cream has warmed through its ready to serve over pasta or rice. salt and pepper to taste.

For ds I normally mix his with some cream cheese to make it extra cheesey and give him his own little dish of grated cheese to sprinkle on top. Its quite a simple dish and a house favorite I think dh would have it everyday if he could.

Does the lemon not curdle the cream in the lemon chicken?

Daemara · 21/05/2007 09:01

jellyjelly, not had that problem as long as you keep the heat up and keep stiring it till the cream or cream fraiche is througly heated and bubbling. normall I put in the lemon juice and stir it into the veg and chicken before adding the cream.

Dh has decided to become a househusband. He wants to organise a card index with recipes and ingredients on it to simplify shopping and cooking.

I thoroughly approve of this approach.

It is slowly being borne in on me that he is waiting for ME to organise this index.
