Buffet salad ideas

Does anyone have any great ideas for salads I can serve as part of a buffet please? Preferably Ottolenghi-esque but piss-easy?!

This works well as a warm salad btw in case anyone else is looking!

A friend did this recently and it was lovely. She spiralised the cucumber but you don't have to.

Can't find the link, but roasted carrot, onion and sweet potato (cubes), with lentils, fresh rocket and feta. Tasty!

Roast squash and chickpea (lots of variations, google but I just roast chopped squash with cumin, add chickpeas and a French dressing

No recipes but sprinkling pomegranate seeds and chopped herbs on anything makes it look like it's from Ottolenghi IMO.

rocket, pear and parmigiana is fab drizzled with good olive oil (effort is minimal...slice pear and shave cheese).

watermelon and feta is fab

creamy pesto pasta with fresh peas and pine nuts (mix creme fraiche with pesto before stiring through)

Finely chopped cucumber, tomatoes and red onion. Chuck in some feta.

Green lentils, then with small pieces of the following roasted over top top-
Sweet potato
Aubergine
Red onion
Courgette

Fry off some smokey lardons and toss on top, toss over feta and pommegranite seeds. Done.

Green salad with corrinader, pear and Stilton.

Spiralized beetroot and carrots with toasted chia seeds and a tahini and olive oil dressing.

Also lime juice seems to wake up salads.

asparagus, tomatoes, a huge amount of petit pois, rocket, pomegranate seeds and goats cheese.

Had it in Harvey Nicks and recreate it regularly yum yum
