Baked sweet potatoes

Only 1/5 DC like them, but they are the one DC who is hardest to feed and they are quick to cook in the microwave.
But...am I right in thinking that the skin on a SP is too leathery to eat or am I cooking them wrong?. If they aren't meant to be eaten then great. If I'm doing it wrong I'd appreciate tips.

In my experience they vary. I cook them like a baked potato, rubbed in oil and a bit of salt. Usually I find the skin fine. It's probably down to personal taste. They are also fine for skin on fries; supermarkets sell them pre prepared that way.

I cook them and eat them exactly like a normal jacket potato. The skin isn't any more leathery once cooked than a cooked jacket potato. I do cut off the ends if they are a bit twisty. I cook them in the oven along with the ordinary potatoes (they usually cook a bit quicker).

Same as strange and unusual.

FWIW if you have leftover sweet potatoes, you can use it to make pasta sauce. Really good.

What toppings do you think work well with a sweet potato? I struggle with this as don't think the usual baked beans or cheese are as nice on top of a SP as they usually are on a bog standard potato.

I love a fried egg or two on top of a really well baked sweet potato. Sometimes with spinach in between so I don’t have to eat anything else to feel I’ve had a balanced meal.

All the fillings that go with ordinary potatoes work well with sweet potatoes too (cheese/tuna mayo/baked beans).

Stir fry / chilli /curry type things go especially well IMO

Also goats cheese / things with capers & anchovies / other sharp tastes go well with the sweetness of the sw.pot.

I had one for lunch today with some leftover braised red cabbage and a single meatball and it was surprisingly tasty!

I think they need something to counteract the sweetness. Sour cream is good (even better with bacon bits crumbled on top), or curry works too and is a good way to use up left overs.

I half one, sprinkle over some lemon juice and microwave.

I love mine with houmous and dukkah and a massive salad with beetroot dressing.
