Left over rice

Hello

I’m rubbish at cooking the right amount of rice! So as usual got loads left over. Has anyone got any good recipes, I was thinking something cold? But any ideas would be great!

I stir fry mine with onions, peppers, mushrooms or whatever else I have in the fridge and then crack a couple of eggs over the top and stir them in to cook. I serve that cold sometimes or hot with veg.

As a side note I only use a rice cooker now so I rarely have too much leftover.

Egg fried rice. Fry up onion, bit of garlic, little bits of veg such as pepper, carrot, leek, whatever you have really. Add the rice, heat up. In separate pan make a thin omelette. Cut in ribbons and add. Serve with sambal (chilli) and soy sauce. Also good with a couple of shrimp, some leftover pork/beef... Indonesian 'the day after rice with whatever we have left' dish.

Rice pudding, cook with milk, cardamom and sugar..

75g each adult for a main meal, 50g per adult as a side or for a child as a main meal [by main meal, with 2 other things, or with a curry].

Weight it out before cooking. Never cook too much rice again.

Try with Thai green curry paste, broccoli, Bok choi/any other veg
