Steamed beetroot

I’ve ended up with too many packets of steamed beetroot, what could I do with it other than a salad? It would be a shame to waste ti.

Beetroot and horseradish soup

Heat it up in bouillon and then blitz with horseradish

If it's the vacuum packed stuff then it actually keeps for a good month after the use by date so don't feel you have to use it all straight away

Beetroot houmous is lovely - and if you are feeling adventurous then beetroot and chocolate cake is another good one
