Potato salad?

What's your favourite recipe/method? I just use bought mayo and chopped red or spring onion...how do you make yours?

we're (controversially) a no mayo potato salad household! We do potatoes, onion, gherkin, white wine vinegar, spring onions, caraway seeds and shed loads of dill...

With mayo, but adding hard boiled eggs, chopped gherkins, onion and a handful of frozen peas. MIL gave me this version, it's Polish and is the best I've ever had! But think I might try half creme fraiche and adding dill next time I make it - as they should good additions!
