Homemade Coleslaw

Hello,

I'm looking to make a simple coleslaw, can it just be shredded cabbage and carrots mixed in with mayonnaise and seasoning

I've googled online and they all seem to make fancy dressing with ingredients I don't have

Yes that's fine, but it won't be quite the same as shop-bought which use double cream or creme fraiche as well. Most are seasoned with chives or an onion. Some even have Cheddar. We had a nice one with lemon zest once.

Finely shredded white cabbage, finely grated carrot, small amount of finely grated onion or shallot.

Add vinaigrette - olive oil, wine vinegar, salt and black pepper - and stir through. Just before serving, stir through some full fat mayonnaise.

Easy and lovely!

Ah I don't have any white vinegar or olive oil only rapeseed oil

Chop cabbage and spring onion and fine grate carrots squash as much juice out the carrot as you can either using Muslim or just gripping tightly hands (drink the juice it's nice) otherwise it can end up a bit watery whatever dressing you choose to use mixing together first I use 1/3 salad cream 2/3 mayonnaise and juice of half a lemon lots of black pepper mix it up together first and taste it add whatever you think is needed when you like to taste add it to the chopped & grated veg. if you mix it together straight with vegetables and you don't like it you wasted all the veg as well it's easier to adjust the flavour when it's just the dressing

Its fine just with mayo, that's what I do. It went all funny when I tried adding vinegar.

I use mayonnaise and a slosh of whatever else I have that’s a bit creamy or tangy - the tang makes it nicer I think. Today I used sour cream (as I had a pot open), sometimes a squeeze of salad cream and double cream. You could use natural yoghurt or creme fraiche too.

Buy a good mandolin - you'll never eat shop bought again! It can be as simple as carrot, white cabbage and white onion dresses with mayo, lemon juice and salt and pepper or as fancy as you like.

Add salt right at the end! Else it goes watery

white cabbage thinly sliced, grated carrot and a large handful of sultanas,1/4 teaspoon of celery salt. coat in mayo thinned a bit with water, allow to stand at room temp for about an hour before serving. will keep in fridge for a few days, it will just get a bit less crunchy but still very tasty!
