Using slow cooker in summer months

If you use your slow cooker a lot, what do you cook in the summer months? The same food as in colder weather, or do you have lighter style meals?

I tend to use my slow cooker a lot for stews/casseroles, braises and occasional joints of gammon, but apart from gammon, we tend to eat less sauce-heavy food in summer. Recent changes to our after school activities mean using the slow cooker more would be great, but I'm struggling to think of what to cook as nobody fancies eating the standard food I normally use it for. I also have the problem of DS2 not liking mince, so the go to of spag Bol/chilli/cottage pie is off the menu.

Any suggestions?

You could still do your gammon and serve it with potato salads, veg skewers rice. Same with chicken. Instead of using the liquor to make a rich sauce just use it to actually cook the meat in then drain and serve with lighter options.
