A simple chilli con carne recipe anyone?

I'm looking for a simple, fool proof chilli con carne recipe, if anyone has one?

I have the in laws coming to stay next week and FIL is the fussiest water on the planet but I know he eats chilli so hoping to make up a nice pot. Has to be simple as my cooking skills are very limited.

This one by Lorraibe Pascale is really good! I searched ages for a chilli recipe I liked withour success until a former professional cook recommended this one to me!

Brown lean mince in a pan.
Into your slow cooker put....
1 large diced onion. 1 chopped red pepper. Two crushed cloves of garlic. One crumbled beef stock cube. A teaspoon of mixed herbs. A teaspoon of chilli powder. Two tins of chopped toms. A can of kidney beans. The browned mince. Four rashers od bacon (raw) chopped. Salt abd pepper.

Stir. Lid on. Leave on low for at least 6 hours or high for 3.

Serve with boiled rice, nachos, dips.

Oh oh - maybe try one of those Mexican fajitas or tacos kit boxes. They have the spices in a packet so you dbn't think need to worry about amounts.

2 onion
2 red peppers
2 garlic cloves
500g mince
1 teaspoon each cumin,coriander, chilli fakes.
3 cardamom pods
2 x tins of tomatoes
1 x tins kidney beans.
1 tablespoon each of tomato ketchup , tomato puree.
Fry onion and garlic til soft. Add peppers and fry for a few minutes. Add spices for a minute. Add beef and brown. Add tomatoes, ketchup and tom. Puree. Bring to boil. Add kidney beans an cocoa. Turn down to simmer for about 3 hours.
You can shove it all in the slow cooker if it's easier once you get everything added.

Don't use the spices mix from an Old El Paso taco kit. I did once and it was revolting. Smelled like a tramps old boot but tasted totally bland.
Chilli is so easy to make. Brown the mince first, then add chopped onion & maybe a chopped red pepper and cook for a few more mins. Then add carton of chopped tomatoes, squeeze of garlic paste, teaspoon of Bovril &/or Marmite, seasoning, spices to your taste (I use crushed cumin, tiny bit of cinnamon, coriander, paprika, & harissa) & finally a tin of red kidney beans. The secret is to let it all cook for a few hours on a low heat so the flavours develop.

HB recipe is our weekday go to recipe. When time and money rich then JO Comfort Food chilli is sublime.
