Mediterranean veg - what to do

DM is going away and brought round all her veg that she won’t use but I had lots of the same anyway. I’ve chopped (chunky) and fried off peppers, onions, courgettes, mushrooms and aubergines. Now I don’t know what to do with it.

Considered ratatouille or a pasta sauce but any other suggestions?

There’s loads of it so could probably do a few meals!

I’ve already made a cous cous with some more finely chopped versions plus chickpeas and apricots

Use the veg as the base for this moussaka eatinmykitchen.meikepeters.com/zucchini-bell-pepper-and-aubergine-moussaka-with-lemon-ricotta/

Or for a slight variation, fry some lamb mince until browned and stir into the veg along with some crumbled feta cheese. Season with salt, pepper and oregano. Top with mashed potato and a sprinkling of nutmeg and cook in oven for 30-40mins.

Chuck a tin of tomatoes in and blitz it to make a nice sauce.
