ive never pan fried - i always thought they would fall apart when turned over

or covered casserole (same principle as foil parcel just without the foil)

I would pan fry TBH.

Otherwise you could bake it in an oiled dish int he oven, or poach in oven with a little milk.

Got any greaseproof paper or baking parchment?
If so, wrap it in that with a little butter/oil, white wine (if possible), herbs and put in an oven proof dish and bake for say 20 mins.

coat fish in seasoned flour
fry in a pan in some olive oil or sunflower oil

To pan fry I just get the oil nice and hot and then place fish in pan. I never coat mine with flour or anything like that. They won't take very long to cook though, so keep an eye out and turn over part way through.

  1. get pan
  2. add drip or two of oil
  3. heat pan till med-hot but not smoking
  4. put in fillets skin side down
  5. cook med-hot heat 3min
  6. turn carefully with fishslice
  7. 1-2min on other side till cooked through

they are more golden and hold together better and don't stick if you flour coat them
Same goes for fillets

We had people round for dinner on Sat, we were having hake and one person didn't want flour on hers (atkins diet!) so i left it off

The others looked golden brown and lovely, hers was a mushy mess

I almost always pan fry my fish at the moment. I like to do a mix of 3 or 4 fishes with a herb salsa. Yum!
