Does anyone have a good from scratch laksa recipe (veggie)?

I love laksa and tried to make it lots of times from pastes but it's hard to find ones that don't have shrimp or fish sauce in, plus the ones that don't don't always taste great.

Does anyone have a recipe from scratch? It's one of my favourite things to eat on a chilly night.
