Katsu Curry Recipe like Waga?

Does anyone have a brilliant Katsu sauce recipe? Have looked at a zillion recipes and there are so many completely different versions, I don't know where to start!

Basically I want to replicate Wagamama's katsu at home as closely as possible because my whole family will then think I'm a goddess Grin

Hi there

I make this one all the time and it makes my family love me. It’s EXACTLY the same as the Wagamama one.

The only tips I would add is slice the chicken breasts in half horizontally - it makes it easier to cook evenly throughout.

The sauce is sweetened by the carrot - you might decide you don’t need the honey.

The breadcrumbs are chunky and don’t look like they cover all the chicken but they fatten up when cooking and even out into an even coating.

Just to add - I find 4 minutes each side for the chicken works well. It stays roasting hot if you’re doing it in batches.

I sometimes just do the chicken and serve with oven chips - the coating is gorgeous if you add a few dried herbs and spices to the breadcrumbs.

The HB one from their Curries book is nicer than Wagamama's according to DS2

I cheat and use Golden Curry sauce. You can buy it in Asian/international grocery shops and also Ocado.

I buy the medium hot and hot version and mix them together; it's not a sauce as such but comes in small blocks which you add water to. It is delicious!

We cheat & get the Mayflower curry sauce sometimes. Lovely on fish.
